Nothing sums up Sri Lankan food like rice and curry. Despite the plain name, it is a spread of many parts: rice at the centre and a rotating cast of vegetable, lentil, fish or meat curries, sambols and pickles around it.

What is on the plate

Expect dhal, a green leaf mallung, a coconut sambol, a fiery pickle and one or two mains. Each dish is seasoned differently, so every mouthful can taste new.

How to eat it

Locals mix small amounts together with the fingers of the right hand. A "lunch packet" wrapped in paper is the cheap, portable version eaten all over the island.

Finding the best

Simple local "hotels" (small eateries) often serve the truest versions at midday. Go where the room is full of office and market workers around lunchtime.
